Cuke Pickles


Pickled Cucumbers

6 C thinly sliced cucumbers w/skin
1 C thinly sliced onion
1-2 C thinly sliced bell peppers, any color

Salt and cover w/ice for 2 hours
Drain well

1 1/2 C white vinegar
2 C sugar
Bring to boil, cool, pour over veggies

Keeps several weeks in frig

  4. Ha ha next your'll be pickling eggs! Ooh now there's an idea. Thanks for the post it's great! A great visial decorating detail too. I might do it just to add to my thriftyly done kitchen makeover. It involves "Frenchifying" everything in sight. I'll get round to posting it when it's done.
